Pasta ala Genovese with Chicken

I love having pasta for dinner on days that I workout! As you know my all time favorite is my Red pesto pasta. But I also make a delicious green pesto pasta!

Duration: 15 minutes

The ingredients for 1 serving:
  • 90 gr Kamut pasta
  • 1 chicken breast
  • 150 gr mushrooms: I prefer chestnut mushrooms
  • 1 (small) white onion
  • 1/2 zucchini
  • 1 garlic clove
  • Handful of arugula
  • 150 gr cherry tomatoes
  • Homemade Pesto ala Genovese 
  • Roasted pine nuts
  • Parmesan cheese
  • Salt & Pepper
  • Olive oil

  1. Cook the pasta as directed on the package and make the Pesto ala Genovese if you haven't already done this during your meal prepping!
  2. Cut the chicken into small pieces. Heat up 1 tbs olive oil and 1 crushed garlic clove in a fry pan, season the chicken with salt and pepper and bake until golden brown.
  3. Cut the mushrooms, onion and zucchini and add them to the fry pan when the chicken is halfway trough. Don't forget to season the zucchini with some salt and pepper.
  4. Put a handful of arugula on your plate. Mix the pesto through the pasta when done, add the vegetables and chicken to the pasta pan, give it a stir and put on top of the arugula. Slice the cherry tomatoes and sprinkle them over the pasta with some pine nuts and parmesan cheese.
