Blueberry oatmeal

I came to the conclusion that the only 'regular' oatmeal recipe posted on the blog was my Banana-Apple Oatmeal. Which means that it's time for a new one because that's not the only way I eat my oats in the morning! The E-Book will also contain some oatmeal variations but not this blueberry oatmeal.

Duration: 15 minutes

The ingredients for 1 bowl:
  • 150 ml unsweetened almond milk
  • 50 g oats
  • 1 banana
  • 4 tbs blueberries
  • 1 tbs linseeds
  • 1 ts chia seeds
  • 1/2 ts cinnamon
  • 1/2 ts vanilla extract
  • 4 pecans

What you do:
  1. Put the almond milk and oatmeal in a saucepan and cook until the oats are done.
  2. Meanwhile slice the banana into small pieces and put 2/3 of the banana, the cinnamon and vanilla extract in the saucepan with the oatmeal. Add 3 tbs blueberries, linseeds and chia seeds, give it a good stir and let it sit on low heat.
  3. After 5 to 10 minutes from start, turn of the heat and let it soak for a couple of minutes.
  4. Crush the pecans, put the oatmeal in a bowl, top off will the rest of the banana, blueberries and crushed pecans.

Enjoy!
