Lasagnette

One of my favorite meals at my parents is Lasagnette from a Knorr packet. Yeah I know, cheat because it comes from a packet, but my parents always eat it and it's so damn tasty! This past week my mom made it again when I had dinner at their house, so I figured that their must be a way of making this by myself so it's more healthy and fitting to my lifestyle. And yes it worked !! However, it turned out to be a vegetarian version because I was stupid enough to forget minced meat in the supermarket, but nevertheless delicious.



The recipe for 4 persons:

The ingredients:

  • 1 onion
  • 1 red onion
  • 4 garlic cloves
  • 1 zucchini
  • 250 g chestnut mushrooms
  • 2 cans diced tomato (800 g total)
  • 1 tbs paprika powder
  • 1 tbs oregano
  • 1 ts rosemary
  • 1 ts thyme
  • 1/2 ts nutmeg
  • 100 g spelt lasagne sheets
  • handful fresh basil
  • Mozzarella
  • Grated cheese
  • Olive oil
  • Salt & Pepper

What you do:
  1. Preheat the oven to 200 degrees Celsius. 
  2. Chop both onions and put ina frying pan together with a splash of olive oil and 4 crushed garlic cloves over medium heat. Meanwhile, cut the mushrooms and zucchini into slices and add to the onions in the pan. Allow to bake for 5 to 8 minutes until the vegetables are soft. 
  3. Then add the diced tomatoes and all the spices and bring to taste with salt and pepper. Fill slightly less than half a can of diced tomatoes with water and add to the sauce in the pan. Let the sauce simmer for 5 to 8 minutes on low heat. 
  4. Meanwhile break the lasagna sheets into smaller pieces and tear the basil. Also Grease a baking dish with olive oil. 
  5. Stir the broken lasagne sheets into the sauce and simmer for about 5 minutes. 
  6. Put the lasagnette in the greased baking dish and arrange sliced ​​mozzarella slices on top. Then sprinkle some grated cheese over it and put 40 minutes in the preheated oven.
  7. After you get the lasagnette from the oven, make sure you let it sit for 5 minutes before you serve
