Noodlesoup with Shrimps and Cauliflower

Inspired by a dish from my Hello Fresh box a couple of weeks ago I decided to make a quick and easy noodlesoup myself and it turned out great! Perfect for when you feel like having a light dinner.



The recipe for 1 person:

Duration: 15 minutes


The ingredients:

  • 500 ml vegetable stock made of one stock cube
  • 70 g noodles
  • 100 g wok shrimps
  • 1 carrot
  • 1 sweet paprika
  • 1/4 head cauliflower
  • 1 spring onion
  • 2 lime leaves
  • Olive oil

What you do:
  1. Cut the carrot into thin slices and the paprika into small pieces. Heat a tablespoon of olive oil in a pan over medium heat and bake the carrots and pepper 3 to 4 minutes. Meanwhile, make the vegetable stock and finely chop the cauliflower. 
  2. Put the broth along with the cauliflower and two bruised lime leaves in the pan and cook over medium heat for 10 minutes. After 2 minutes, add the shrimp and halfway through the cooking time the noodles. Cut the onions into rings. 
  3. Remove the lime leaves from the soup. Put the soup in a bowl and garnish with the spring onion rings.
