Rice Paper Rolls

Yesterday we had a tapas style dinner date with the girls from Bootcamp. Everybody brought something so I  decided to make these delicious rice paper rolls. Recipe is originally from a friend.




The recipe for 6 rolls:

The ingredients:


  • 6 sheets rice paper
  • 1/2 mango
  • 2 carrots
  • 3 spring onions
  • 4 leaves Chinese cabbage
  • Coriander to taste
  • 1 tbs grated ginger
  • 4 to 5 tbs soy sauce
  • Juice of one lemon
  • 1 ts sesame seeds
  • 1 garlic clove


What you do:
  1. Grate the ginger and put in a bowl along with a crushed clove of garlic and mix with the soy sauce and lemon juice. Then set it aside. Also boil some water.
  2. Then slice the mango and Chinese cabbage into thin strips, grate the carrots and cut the spring onions into rings.
  3. Soak the rice paper sheets for a few seconds in boiling water until soft. Do this one by one and note that the paper may stick together. Put the soaked paper on a dry board (I used a glass board because the roll kept sticking to my wooden board). Top it with the carrot, mango, spring onion, Chinese cabbage and coriander to taste. Fold the paper closed. First I fold the narrow edges inwards and than the wider edges (see below).
  4. Cut the roll in halve and serve with the sauce.
