The recipe for 3-4 persons:
Duration: 15 minutes prep + 45 minutes in the oven
The ingredients
- 2 zucchini's
- 100 g parma ham
- 800 g diced tomatoes
- 4 tomatoes
- 4 tbs homemade red pesto
- 250 g ricotta cheese
- 1 egg
- 2 tbs oregano
- couple of thyme sprigs
- 1 mozzarella
- grated Parmesan cheese
- Salt & Pepper
What you do:
- Preheat the oven to 200 degrees Celsius.
- Cut the zucchini into long thin slices. I've done this with a cheese grater, they are somewhat to thin but I just put two on top of each other when layering the lasagna. Cut the tomatoes into slices.
- Mix the ricotta with the oregano and the egg. Add salt and pepper and stir well. Mix the tomatoes with the red pesto in another large bowl with the leaves from the thyme sprigs.
- Grease a baking dish with olive oil and make layers of diced tomatoes, zucchini, tomato slices, Parma ham, ricotta. Repeat and finish with tomato sauce.
- Cut the mozzarella into slices and lay it on top and finish with grated Parmesan cheese.
- Put the lasagna in the preheated oven for about 45 minutes.
Ik maak zelf ook regelmatig courgette lasagne, maar de combinatie met parmaham lijkt me een heel leuke aanvulling. Ga ik zeker eens proberen!
